A traditional pulled chicken/pork takes an entire day to make; it slow cooks for hours and feeds a crowd. What if you wanted the same without the work and the time involved in making it? TADAA! Here it is, this is our version of Pulled Chicken for the home-cook, and we hope you like it.
We are using our spicy barbecue marinade to make this dish, but you can always substitute it with your favorite barbecue sauce.
Instant Pot is a sensation with Indian home cooks worldwide, especially in the United States. Many books and recipes catered to the Indian audience have been written on using Instant Pot. In Indian cuisine, we use a traditional pressure cooker to pressure cook lentils, and Instant Pot is nothing but a much more advanced pressure cooker and a lot more. Seriously! Like having a flip-phone (traditional pressure cooker) vs. Instant Pot (iPhone 12). I think you get the difference.
We are also going to make this dish in an Instant Pot; if you don't have an Instant Pot, it sucks, either 1) buy one (Bed, Bath, and Beyond offers a 20% discount) OR 2) Apply some marinade and roast your meat in a 300 degree F pre-heat oven for a couple of hours.
Serves: makes 8 burgers
Ingredients
Pulled Chicken
1 lb chicken breasts, boneless skinless OR 1 lb of boneless skinless pork butt
1 bottle Rupen's Kandoo Spicy Barbecue Marinade
1/2 cup chicken stock
2 Tablespoons oil
1 teaspoon sea salt
For the burger
8 slider buns
2 cups coleslaw, store-bought
Instructions
Take the inside container of your Instant Pot and place chicken breasts, HALF of the marinade, chicken stock, and oil. Mix.
Pressure cook this on HIGH for 10-12 minutes. Let the pressure release itself.
Open the pot after 20 minutes and remove the chicken pieces onto a cutting board. Allow it to cool. You can use the liquid as a stock for another recipe.
Once the chicken pieces are cool enough to handle, pull them using your hand (or a pair of forks) and mix in the remaining marinade along with salt. Set aside.
You can eat this as it is, or prepare a quick easy slider for your meal.
To make a pulled pork/chicken slider, place 2 Tablespoons of pulled pork/chicken in between two buns along with a Tablespoon of coleslaw. Serve.
