I was cooking a few dishes for Firdosh's weekday lunches. He was making one recipe, and I found it interesting. Its easy, its one pot, its vegetarian and its healthy.
Ingredients
4 tablespoons oil
1 tablespoon cumin seeds
2 cups mushrooms, diced
2 cups orange bell pepper, diced
1 tablespoon curry powder
1 tablespoon ginger garlic paste
1/2 jalapeno, finely chopped
Salt to taste
Instructions
Heat oil in a pan and when the oil is hot, add cumin seeds, ginger garlic and jalapeno. Saute for a couple of minutes.
Add mushrooms, pepper and curry powder.
Cook covered for about 15 minutes on medium-low heat, stir every 5 minutes.
Adjust salt and serve warm.
