This Coconut Turkey Soup with our Konkan Sauce is a rich and flavorful dish that combines the creamy goodness of coconut milk with the bold flavors of Konkan Curry. It makes for a comforting and satisfying meal, perfect for any time of the year.
Ingredients:
1/2 cup Rupen's Konkan Curry1/2 cup water
1/2 cup coconut milk
1 tablespoon cooking oil
1/4 teaspoon ground turmeric
1/4 teaspoon ground black pepper
1 lb boneless, skinless, leftover turkey meat, cut into bite-sized pieces
Instructions:
Heat oil in a saucepan, add turmeric and pepper.Sauté turkey until browned and cooked (about 5 minutes).
Stir in Konkan Curry sauce.
Add water and coconut milk, bring to a boil.
Reduce heat and simmer for 5 minutes.
Adjust seasoning.
Serve hot, optionally garnished with fresh herbs. Enjoy!
