French Lentil Masala Soup


A hearty and flavorful French lentil soup made with Rupen's Masala Sauce, vegetable stock, and finished with a touch of cheese and fresh basil for the perfect cozy meal.

Ingredients:

  • 1 cup French lentils, rinsed and drained
  • 4 cups vegetable stock
  • 1 cup Rupen's Masala Sauce (any variety of your choice)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish
  • Grated cheese (Parmesan, mozzarella, or your choice), for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes until softened and fragrant.

  2. Stir in the French lentils and Rupen's Masala Sauce, coating the lentils well.

  3. Pour in the vegetable stock and bring the mixture to a boil. Lower the heat, cover, and let it simmer for 25-30 minutes, or until the lentils are tender. Stir occasionally.

  4. Taste the soup and adjust seasoning with salt and pepper as needed. If the soup is too thick, add a bit more stock or water to reach your desired consistency.

  5. Ladle the soup into bowls. Top with grated cheese and fresh basil leaves.
