Ingredients:
- 2 lbs cooked, chopped turkey
- 1 cup Rupen's Madras Curry sauce
- 1 cup water
- 2 cups ripe mango, diced
- 1/2 medium onion, finely chopped
- 1 tbsp oil or ghee
- Salt, to taste
- Fresh cilantro, chopped, for garnish
Instructions:
-
In a large skillet or saucepan, heat the oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes.
-
Add the Rupen's Madras Curry sauce and water, stirring well to combine. Bring to a gentle simmer.
-
Add the chopped turkey, stirring to coat it in the sauce. Simmer for about 5-7 minutes, allowing the turkey to absorb the flavors.
-
Stir in the diced mango and cook for another 2 minutes, just until the mango softens slightly.
-
Taste and adjust salt if needed. Garnish with fresh cilantro and serve hot with rice or naan.
