Leftover Turkey Madras with Mango


This Leftover Turkey Madras Curry is a perfect blend of warmth and sweetness, featuring tender chunks of turkey and juicy mangoes in a rich, aromatic Madras curry sauce. Quick to make and full of bold flavors, it’s a great way to repurpose holiday leftovers into a comforting and satisfying meal.

Ingredients:

  • 2 lbs cooked, chopped turkey
  • 1 cup Rupen's Madras Curry sauce
  • 1 cup water
  • 2 cups ripe mango, diced
  • 1/2 medium onion, finely chopped
  • 1 tbsp oil or ghee
  • Salt, to taste
  • Fresh cilantro, chopped, for garnish

Instructions:

  1. In a large skillet or saucepan, heat the oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes.

  2. Add the Rupen's Madras Curry sauce and water, stirring well to combine. Bring to a gentle simmer.

  3. Add the chopped turkey, stirring to coat it in the sauce. Simmer for about 5-7 minutes, allowing the turkey to absorb the flavors.

  4. Stir in the diced mango and cook for another 2 minutes, just until the mango softens slightly.

  5. Taste and adjust salt if needed. Garnish with fresh cilantro and serve hot with rice or naan.
