Masala means 'spicy/spices' and in this recipe, I am showing you how to make scrambled eggs as found on the streets of India. The key is to use good quality eggs - organic and pasture-raised, and that makes all the difference to your egg preparation. Enjoy!

Ingredients
3 large eggs, beaten
1/2 teaspoon sea salt
1 teaspoon chopped jalapeno
1 Tablespoon chopped cilantro
1/4 teaspoon ground turmeric
2 Tablespoons minced red onion
2 Tablespoons ghee
Instructions
In a medium-size mixing bowl, add all the ingredients, except ghee. Mix. Set aside.
In a medium-size fry pan (preferably non-stick fry pan), add ghee. When the ghee has melted, add eggs and constantly stir and fold eggs as shown in the video. This will help in scrambling of the eggs.
When the eggs are almost cooked (about 95%), remove from heat and place it on a serving plate. The residual heat in the eggs will ensure complete cooking of eggs. Serve warm.
