A hearty and comforting dish with tender soy balls simmered in Rupen’s creamy saag sauce, enriched with vegetable stock, and loaded with sweet carrots and vibrant peas. Perfect for a flavorful, plant-based meal for four.
Ingredients:
- 1 jar of Rupen's Saag Sauce (about 12 oz)
- 2 cups vegetable stock
- 1 cup soy balls
- 2 large carrots, diced
- 1 cup peas (fresh or frozen)
- Salt and pepper to taste
- 1 tbsp oil
Instructions:
- Heat the oil in a large pan over medium heat. Add the diced carrots and cook for 5 minutes, stirring occasionally.
- Add the soy balls and sauté for another 3-4 minutes until they start to brown slightly.
- Pour in the vegetable stock and bring it to a simmer. Cook for 10 minutes until the soy balls soften and the carrots are tender.
- Stir in Rupen’s Saag Sauce and peas, then simmer for another 5 minutes until everything is well combined and heated through.
- Season with salt and pepper to taste.
- Serve hot with rice, naan, or your favorite grain.
