Spiced Veggie-Bean Power Bowl


This vibrant power bowl features black beans warmed in Rupen's Masala curry sauce, paired with brown rice, zucchini noodles, corn salsa, and fresh toppings for a flavorful, wholesome meal.

Ingredients:

For the Masala Beans:
  • 1 cup black beans (cooked or canned, rinsed and drained)
  • ½ cup Rupen’s Masala curry sauce
For the Bowl Base:
  • ½ cup cooked brown rice
  • ½ cup zucchini noodles
  • ½ cup kale, lightly sautéed or fresh
  • ½ cup cherry tomatoes, halved
  • ¼ cup corn salsa (corn, red onion, cilantro, lime juice)
  • 2 tablespoons guacamole
  • 1 tablespoon plain Greek yogurt (or 1% low-fat sour cream)
  • A few tortilla chips for crunch

Instructions:

Warm the black beans and Rupen’s Masala curry sauce together in a pan over low heat until heated through.

Cook brown rice according to package instructions. Spiralize zucchini into noodles. Lightly sauté or massage kale with olive oil and a pinch of salt for tenderness. Prepare corn salsa by mixing corn, red onion, chopped cilantro, and a squeeze of lime juice.

Start with a base of brown rice. Arrange zucchini noodles, kale, cherry tomatoes, and corn salsa in sections. Add a generous scoop of the masala beans. Top with guacamole and a dollop of Greek yogurt or low-fat sour cream. Garnish with a few tortilla chips for crunch.
