Ingredients:
For the Masala Beans:
- 1 cup black beans (cooked or canned, rinsed and drained)
- ½ cup Rupen’s Masala curry sauce
For the Bowl Base:
- ½ cup cooked brown rice
- ½ cup zucchini noodles
- ½ cup kale, lightly sautéed or fresh
- ½ cup cherry tomatoes, halved
- ¼ cup corn salsa (corn, red onion, cilantro, lime juice)
- 2 tablespoons guacamole
- 1 tablespoon plain Greek yogurt (or 1% low-fat sour cream)
- A few tortilla chips for crunch
Instructions:
Warm the black beans and Rupen’s Masala curry sauce together in a pan over low heat until heated through.
Cook brown rice according to package instructions. Spiralize zucchini into noodles. Lightly sauté or massage kale with olive oil and a pinch of salt for tenderness. Prepare corn salsa by mixing corn, red onion, chopped cilantro, and a squeeze of lime juice.
