The cold season is the best time to make these spicy bread-like Chai spiced muffins. We use our Masala Chai tea blend to enhance the flavor in these muffins. Serve it alongside warm tea (our Masala Chai will do the trick), and you will cozy up and watch your favorite show or a movie. Enjoy!
Serves: Makes 9 muffins
Ingredients
1 1/4 cups all-purpose flour
1 cup dark chocolate chips
1 teaspoon baking powder
1/4 teaspoon baking soda
Pinch of salt
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
2 large eggs, at room temperature, beaten
1 1/4 cups whole milk
1 1/2 teaspoons Rupen's Masala Chai blend
3/4 cup brown sugar
3/4 stick unsalted butter, at room temperature
Instructions
Pre-heat oven at 375 F.
Over medium heat, in a small saucepan, bring the milk to a boil.
Add Rupen's Masala Chai blend, stir to combine, and let it steep for ten minutes. Strain and set aside.
Sift the flour in a medium-size mixing bowl and mix the dry ingredients - chocolate chips, baking powder, baking soda, salt, ginger, cinnamon, and cloves. Mix.
Add eggs, butter, and brown sugar to another medium-size mixing bowl. Whisk to combine.
Pour this mixture into the dry mixture and combine. Make sure that there are no lumps. Set aside.
Scoop (ice-cream scoop) muffin batter into a greased muffin pan (9-10 muffins). You can line the pan with muffin baking cups.
Bake for twenty minutes. Remove from the oven, cool for fifteen minutes, serve.
