Konkan, the ‘corner piece,’ is a coastal land on the west coast of India. Hindu scriptures mention that this land was created when one of the avatars of Lord Vishnu threw an axe into the sea and commanded the Sea God to recede to where his axe had fallen. This curry, made from a fresh herb paste and coconut milk, represents this coast’s bounty.
