Arabian Chicken & Rice (Kabsa)


Chicken Kabsa, also known as "Kabsa" or "Majboos," is a traditional Middle Eastern dish that is popular in Saudi Arabia and other Gulf countries. It's a flavorful and aromatic rice dish typically made with long-grain basmati rice, tender chicken (often on the bone for added flavor), and a blend of spices. Here is a recipe for Chicken Kabsa, made with our products.

Serves: 4

Ingredients

2 lbs chicken breast, cut into kebab-sized pieces
1/2 jar of Rupen's Kandoo marinade

For the pilaf:

1/3 cup olive oil
1/2 cup raisins PLUS 1/2 cup slivered almonds
2 cups white onion, diced 1 cup shredded carrots
1 jar of Rupen's Masala curry sauce
1 1/2 cups chicken stock
1 1/2 cups white basmati rice (extra long variety)
1/2 cup parsley, chopped
Salt and pepper to taste

 

Instructions

Marinate the chicken: Place the chicken pieces in a bowl and coat them evenly with the Kandoo marinade. Cover and refrigerate for at least 30 minutes to let the flavors infuse.
Preheat the grill: Preheat your grill to medium-high heat. Thread the marinated chicken pieces onto skewers and grill them until cooked through and slightly charred, about 8-10 minutes per side. Set aside.

Make the Masala Pulao:

In a Dutch oven or large pot, heat the olive oil over medium heat. Add raisins and almonds, sauté for a couple of minutes, remove and set aside. In the same oil, add the diced onions and sauté until translucent, about 5 minutes.
Stir in the white basmati rice and sauté for another 5 minutes, allowing the grains to toast slightly.
Pour in the jar of Rupen's Masala curry sauce and the chicken stock. Bring the mixture to a boil.
Simmer and cook: Reduce the heat to low, cover the pot with a lid, and let the pulao simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
Once the pulao is cooked, remove it from heat and let it sit for 10 minutes, covered. Then, gently fluff up the rice with a fork. Stir in the chopped parsley for added freshness and color.

Serve: Transfer the masala pulao to a serving plate and arrange the grilled chicken kebabs on top. Garnish with additional parsley if desired. Serve family-style and enjoy!
