Summer is a great time to enjoy our Tandoori marinade on vegetables or meat, and in this case, the classic Indian Paneer cheese. Halloumi is an excellent substitute if you cannot find paneer. Paneer is found at Indian grocery stores and Whole Foods stores in the refrigerated section.
Serves: 3-4
Ingredients
1 lb Paneer cheese, cut in 2 inch square cubes that are 1/2 inch thick
1 green bell pepper, deseeded and cut in 2 inch cubes
1 red bell pepper, deseeded and cut in 2 inch cubes
1 large red onion, peeled and cut in 2-inch cubes
1/2 cup Tandoori Marinade
1 teaspoon salt
1 teaspoon ground black pepper
2 Tablespoons olive oil
2 Tablespoons lemon juice
1/4 cup chopped cilantro
Instructions
Pre-heat your oven/ grill to 350 F.
In a medium-sized mixing bowl, add tandoori marinade and paneer pieces. Gently toss and set aside.
Add the vegetables, olive oil, salt, and pepper to another medium-sized bowl. Gently toss and set aside.
Skewer paneer alternating with onion, green bell pepper, and red bell pepper, and place it on an aluminum foil-covered half-cookie sheet.
You can buy/ grill based on your manufacturer's instructions.
Garnish with cilantro and sprinkle lemon juice. Serve warm with store-bought tandoori naan.
